The kitchen is certainly not my favorite place to spend time in our home. All you have to do is read the tagline of this blog to know I would rather be crafting or decorating than cooking. I love food, and I don’t even mind the preparation part most of the time, but it’s the planning and shopping for something that only lasts a short while that I struggle with. When you paint something it’s painted until you want to change it. It’s something you can check off a list and move on. Cooking is several times a day. Every. Day.
But baking? It feels a bit more crafty, and I’ve always kind of enjoyed it. Too much. Like “eat the whole pan in under 24 hours” like. So for the sake of my hips and thighs I try not to do it too often. This will never turn into a food blog, but I thought today I’d show you some easy whoopie pies that my husband eats as quickly as me. And they’re made with a box of cake mix and a can of frosting – quick and easy.
Here is what you’ll need:
Box of Funfetti cake mix
Can of vanilla frosting
3 eggs
1/3 cup oil
Cookie cutter ( I used this Wilton fondant cutter set from Michael’s)
Preheat oven to 375 degrees. Start by combining the eggs, oil and cake mix in a bowl. I used the yokes and the cake mix is pretty yellow. I get farm fresh eggs from my in-laws, so they’re especially yellow – once you go farm fresh you can never go back! You can use 4 egg whites if you want the cake to be whiter.
Put half the dough on a greased cookie sheet. I always put down some foil so I don’t have to wash the sheet. A little lazy? Perhaps.
Use a spatula to spread the dough out. You’ll want it about 1/4″ thick. Bake at 375 for around 8 minutes. Your time may vary based on your oven. Mine cooks pretty unevenly, so I flip the sheet halfway through too.
Let the dough cool for a few minutes and then use a cutter to cut out little hearts. The heart shape allowed the cutouts to be really close together, not leaving much waste. And who am I kidding, I just ate the “waste” as I went!
You can just knife the frosting on, but I find it easier and cleaner to pipe it on. I used a #12 tip.
Place another heart on top and enjoy!
Or give as gifts. They’re great for family or teachers. A few years ago Xander and I made a similar recipe and he decorated some paper bags with stamps for packaging.
My how time flies. It’s hard to believe it’s been two years since he was two.

i made the mistake of getting up at 530am to make my family red velvet waffles before school one year and now it's a tradition. i love the tradition, except the 530am part. i'm excited for valentine's to be on the weekend next year so they can perhaps be brunch waffles.

Ha! Once you go farm fresh, you never go back. SO true! We get farm fresh eggs from my in-laws, too. 🙂 For some reason, I always have to have heart-shaped sugar cookies around Valentine's Day. Those napkins and that glass are speaking to me. LOVE. As for cooking, meal planning, grocery shopping, I am WITH you. UGH! I do it only because I have to.
